Hey everyone, sorry for my absence. I’ve been settling into small town life, getting my house set up and working away amidst dropped power/internet/cell phone signals. I have a few posts lined up for the next couple of days, so stay tuned!
I realized recently that I haven’t commented much on the food here. I had been told to expect a lot of rice and beans; while those are pretty common staple foods, they’re usually supplemented with other Honduran fare.
